Hiramasa Kingfish has pale pink flesh with firm, large flakes and a delicate sweet flavour. Nicknamed as the “king of fishes”, Hiramasa makes a superb sashimi fish, with its slightly springy and firm texture yet a complex and delicate umami tasting notes.
