 THAI GREEN CURRY WITH KINKAWOOKA MUSSELS
Preparation time: 10 minutes
Serves: 4 as a starter or 2 - 3 as a main course
Ingredients
1 bag of Kinkawooka Boston Bay Pot Ready Mussels
1 tablespoon peanut or vegetable oil
2 tablespoons ready-made Thai green curry paste
50g ginger sliced, 100ml water
1 lime juice, 250ml coconut milk
1 medium red chilli chopped, seeds removed
Small bunch coriander, roughly chopped, plus extra leaves to garnish
Method
1. Heat the oil in a frying pan and add the curry paste.
Fry for 2 minutes, then add the water and
lime juice.
2. Cook for a further 2 minutes and add the coconut milk, Kinkawooka Boston Bay Pot Ready Mussels and coriander. Simmer for 5 minutes.
3. To serve, pour into a warm bowl and garnish with chopped coriander and chopped chilli.
4. Serve with steamed jasmin rice and an icy cold beer.
